Day 3: No Pressure Cooker for Tulingan

In the kitchen of a roadside carinderia in Balayan, Batangas, Joy (A), a young cook from Manila, suggests to Robert (B), the owner, a faster way to cook the sinaing na tulingan he simmers all night in clay pots.

    Kuya Robert, sa pressure cooker po, isang oras lang, malambot na ang tinik ng tulingan.

    Kuya Robert, in a pressure cooker it takes just an hour, and the tulingan's bones go soft.

  2. B

    Pressure cooker? E 'di sardinas na lang ga ang ihain natin?

    A pressure cooker? Then why don't we just serve canned sardines, ga?

  3. A

    Seryoso po ba kayo, o nagbibiro? Hindi ko po mabasa ang mukha ninyo, Kuya.

    Are you serious, or are you joking? I can't read your face, Kuya.

  4. B

    Mukha ga akong nagbibiro? Tatlumpung taon itong niluto ng nanay ko sa palayok.

    Do I look like I'm joking, ga? My mother cooked this in clay pots for thirty years.

    Pero puyat po kayo gabi-gabi sa pagbabantay. Mas praktikal po ang pressure cooker.

    But you're up every night keeping watch. A pressure cooker is more practical.

  6. B

    Praktikal ngani. Bukas, ikaw ang magbabantay ng palayok magdamag, para makatulog ako nang praktikal.

    Practical, sure. Tomorrow you watch the pots all night, so I can get some practical sleep.

  7. A

    Kuya, biro po ga iyan, o overtime ko na po?

    Kuya, is that a joke, ga, or is that my overtime now?

  8. B

    Aba, nahawa ka na sa ga ko. Tikman mo muna ito bago mo galawin ang palayok.

    Well, look who's caught my ga. Taste this before you lay a finger on those pots.

  9. A

    Ay, natutunaw po ang tinik, at nanunuot ang asim ng kamias! Sige po, palayok na, pero puwede ga sa nilaga ang pressure cooker?

    Oh, the bones just melt, and the tang of the kamias goes all the way through! Fine, clay pots it is, but can the pressure cooker at least do the nilaga, ga?
